Before it goes in the basket
Peel, seed, and cut cubes to one size — and mean it. Squash is dense and the cooking time follows the largest cube in the basket, so a 2 cm cube next to a 3 cm one gives you mush and crunch on the same plate. Oil the basket as well as the squash, and shake at the halfway mark.

- 1. Preheat the air fryer to 390°F (200°C) for 2–3 minutes.
- 2. Single layer. Arrange without crowding — air needs to reach every side.
- 3. Cook 15–18 minutes. Shake the basket or flip at the halfway mark.
- 4. Check doneness. Corners are browned and a fork goes through the middle with no crunch left in it.
The tip that matters
Oil the basket as well as the squash. The sugar caramelises and glues the cut faces down, and prying them off takes the browned side with it.
Why this temperature
390°F browns the cut faces while the inside is still coming up to soft. Squash carries a lot of sugar, so the outside colours early and the middle is the thing to wait for — which is why this is one of the longer times in the basket rather than a hotter one.
What usually goes wrong
- Browned outside, hard in the middle. Cubes too big. Cut smaller rather than cooking longer; longer just darkens what is already dark.
- Stuck to the basket. The sugar caramelised onto bare metal. Oil the basket, and lever from the side rather than straight up.
- Mushy. Uneven cubes, and the small ones went first. One size is the whole trick with dense vegetables.
