Why this temperature
390°F is high because the goal is to drive water out of a dense bean, not to cook it — canned chickpeas are already cooked. Below that they dehydrate slowly and end up leathery rather than brittle.

- Chewy, not crunchy. Still wet when they went in, or pulled too early. Dry harder and add three minutes.
- Soft again an hour later. Normal. They pull moisture back out of the air. Eat them the day you make them.
- A few popped. Trapped steam in a bean that was not dry. Harmless, and a sign the rest needed longer drying too.
