Tilapia fillets are thin and almost always uniform, which makes them easy — but they are also fragile. Oil the basket first, lay the fillet down once, and do not try to turn it. Season on top only.

- 1. Preheat the air fryer to 390°F (200°C) for 2–3 minutes.
- 2. Single layer. Arrange without crowding — air needs to reach every side.
- 3. Cook 7–9 minutes. No flipping needed.
- 4. Check doneness. Confirm 145°F (63°C) at the thickest part with a thermometer.

Season under and over: thin fish has no interior to carry flavor, so both faces do the work.
Why this temperature
390°F for seven to nine minutes is short enough that a thin fillet does not dry out. Tilapia is thinner than cod, so the same temperature needs noticeably less time.
What usually goes wrong
- Broke in half. Turned. Thin fillets do not need turning at all — the fan cooks the top.
- Bland and pale. Nothing on the surface. A little oil, paprika and lemon zest change this completely; tilapia contributes very little flavour itself.
- Overdone. Nine minutes is the outside limit for a thin fillet; start checking at 7.
