Why this temperature
360°F is the lowest useful temperature for a whole bird, and that is the point. A chicken this size needs close to an hour, and anything hotter blackens the skin long before the thigh joint reaches 165°F.
What usually goes wrong
- Skin burnt, thigh still pink. Too hot. 360°F and patience is the only route; a whole bird cannot be rushed.
- Breast dry, thighs perfect. Cooked breast-up the whole time. Start breast-down for the first half.
- Reads 165°F but juices run pink. You probed the breast. Measure the thickest part of the thigh without touching bone — that is the last part to finish.
