Before it goes in the basket
This is the biggest bone-in piece most baskets will take, so check it fits flat before you preheat. Dry and salt the skin, and if the quarter is very large, separate it into thigh and drumstick — two pieces cook far more evenly than one bent one.
Step by step
- 1. Preheat the air fryer to 380°F (195°C) for 2–3 minutes.
- 2. Single layer. Arrange without crowding — air needs to reach every side.
- 3. Cook 25–30 minutes. Shake the basket or flip at the halfway mark.
- 4. Check doneness. Confirm 165°F (74°C) at the thickest part with a thermometer.
The tip that matters
Dry the skin and salt it an hour ahead if you can; that's the difference between crisp and chewy skin.
Why this temperature
380°F is a compromise. A leg quarter needs 25–30 minutes, and at 400°F for that long the skin darkens too far before the joint between thigh and drum reaches 165°F.
What usually goes wrong
- Skin black at the edges, joint underdone. Too hot for the size. Drop to 360°F and extend by 5 minutes.
- Touching the element. The quarter is tall. Press it flatter or split it at the joint.
- Pink at the joint. That joint is the last place to cook. Probe there specifically, not in the thigh meat.
Times vary — here's why
Air fryers differ in wattage and basket size, so treat 25–30 minutes as a range, not a promise: check early the first time, then note what your machine needed. Quantity matters too — a full basket can add 2–3 minutes, and anything stacked will steam instead of crisp. Converting your own oven recipe instead? Use our air fryer conversion calculator.
