Cut, salt the faces, and leave them in a colander for twenty minutes, then blot. Eggplant is more water than flesh, and the salt pulls enough of it out that the slices roast instead of stewing. Oil comes after the salting, never before: a dry slice is a sponge and will absorb a quarter cup without ever tasting of it.

- 1. Preheat the air fryer to 380°F (195°C) for 2–3 minutes.
- 2. Single layer. Arrange without crowding — air needs to reach every side.
- 3. Cook 12–15 minutes. Shake the basket or flip at the halfway mark.
- 4. Check doneness. Edges are deep brown and collapsed, and a fork meets no resistance in the middle.

Why this temperature
380°F is hot enough to collapse the spongy structure and brown the cut faces before the water inside has time to steam the slice soft. Lower, and eggplant goes pale, squeaky and bitter — the texture people remember disliking.
What usually goes wrong
- Greasy and heavy. Oiled before salting. The sponge drank it. Salt first, blot, then use half as much oil as feels right.
- Rubbery and squeaky. Not hot enough, or taken out early. Eggplant is only good once it has fully collapsed.
- Bitter. An older, seedier fruit, and no salting step. Salting draws out some of the bitterness with the water.
