Press it. Wrap a block of firm or extra-firm tofu in a clean towel, put a weight on it and leave it 20 minutes — you are removing water so the surface can crisp instead of steam. Then cube it, toss with a spoon of cornstarch and oil, and season. Silken tofu will not work here at all.
Step by step
- 1. Preheat the air fryer to 400°F (205°C) for 2–3 minutes.
- 2. Single layer. Arrange without crowding — air needs to reach every side.
- 3. Cook 12–15 minutes. Shake the basket or flip at the halfway mark.
- 4. Check doneness. Golden crust with crisp edges while the centers stay tender.

Why this temperature
400°F is needed because tofu has no fat and no sugar of its own to brown with. Only very high heat plus a starch coating gives you an actual crust rather than a dried skin.
What usually goes wrong
- Soft and bland, no crust. Not pressed, or no cornstarch. Both steps are doing real work — skipping either gives you warm tofu.
- Stuck to the basket. Starch without enough oil. A tablespoon of oil per block is the right ratio.
- Hollow and tough. Over-pressed and overcooked. Twenty minutes of pressing is plenty; fifteen minutes of cooking is the maximum.
