Why this temperature
380°F drives off the mushroom's own water fast enough that browning can start. Mushrooms release a lot of liquid in the first few minutes, and only heat above about 370°F evaporates it quickly enough to get past the steaming phase.
What usually goes wrong
- Swimming in liquid. Washed, salted early, or crowded. All three add water at the wrong moment.
- Shrunk to nothing. Normal — mushrooms lose 50–60% of their volume. Start with twice what you want to serve.
- Rubbery. Undercooked, oddly enough. Mushrooms pass through a squeaky stage before they turn silky; push through it.
